Remove hens from pan and drain excess oil. Let hens rest, uncovered, 5–10 minutes. Combine 2 tablespoons salt, thyme, marjoram, and rosemary in bowl. Sprinkle half of salt-herb mixture on underside of hens. Add oil to remaining salt-herb mixture and stir until mixture is evenly coated with oil. Add baking powder and stir until well combined.
Reserve the back bone and cut into smaller pieces for making pan sauce later. Take it off the burner and strain out the solids for a smooth sauce. Taste and adjust the seasoning as needed. Maybe you’re doing the holidays big this year. If you’re not, this recipe is for you!
I haven’t had Cornish game hens in a long time. Amazing and delicious, especially the crispy, cartelized skin. I used fig preserves instead of apricot and will do again for Thanksgiving. Place a hen, breast side down on a cutting board. Remove the backbone by cutting along both sides with shears or a large sharp knife. The first time I made this recipe, I stubbornly packed two rather large Cornish hens on the spit. While it was nice that both chickens were done cooking at once, it took a bit of work to pack them on there. In hindsight, I recommend cooking one Cornish hen at a time in the air fryer. Glad to find this recipe because I just bought some cornish hens for a birthday dinner. These are really so easy to make and I love the presentation.

Sprinkle onion powder, ground mustard, and more salt and pepper onto both sides of the Cornish hens. It depends on the recipe and the model, but usually 1/2 cup liquid is enough for it to function and additional liquid is often released from ingredients in the pot. If your model needs more liquid, you can add 1 cup of chicken broth. The great thing about this recipe is that there’s next to no waste. Repurpose the old bones to make delicious stock which you can use in many more of my Instant Pot recipes.
